More than just your average Sauvignon Blanc. One portion of the grapes is basket-pressed then transferred into oak for wild fermentation; another portion is basket-pressed but transferred to Boonie (the concrete egg) for wild fermentation and skin-contact. It is restrained but textural. Pretty floral perfume the nose accompanied by scents of Kakadu plum, green and yellow flesh fruits with a herbal note. Sweet apple and pear fruit on the palate with delicate white blossom balanced with subtle herbaceous structure.
